SWEDISH MEAT BALLS 
1/3 pound ground pork
1 pound ground beef
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon freshly ground nutmeg
2 cloves garlic, minced (optional)
1 egg
3 tablespoons cornstarch
1 cup milk, or water

Grind the meat together twice, add the rest of the ingredients, and knead for about 15 minutes, adding liquid a little at a time, as mixture becomes dry.

Form into balls and brown in butter. Add 2 cups water, put on tight cover, simmer for about 1 1/2 hours, until tender. Add a tablespoon or two to thicken the broth, as desired. Use a fine mesh sifter to prevent lumps. Simmer for at least another 20 minutes after adding flour.

Makes about 15.
