LASAGNA WITH SPINACH 
2 (10 oz.) pkgs. frozen, chopped spinach, thawed
1 lb. Mozzarella cheese, grated or sliced
10 lasagna noodles

MEAT SAUCE:

1 lb. Italian sausage
1 clove garlic
1 tbsp. parsley flakes
1 tbsp. basil
1/2 - 1 tsp. salt
1 1/2 tbsp. sugar
1 (16 oz.) can tomatoes

Brown sausage and remove excess fat. Add remaining meat sauce ingredients and simmer until thick (45-60 minutes).

COTTAGE CHEESE MIX:

3 c. cream style cottage cheese
2 beaten eggs
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. parsley flakes
1/2 c. grated Parmesan cheese

Combine cottage cheese with eggs, seasonings, and Parmesan cheese. Place layer of uncooked noodles in a 13 x 9 x 2 inch casserole dish. Spread half of cottage cheese mixture, half of spinach, half of meat sauce, and half of the Mozzarella over noodles. Repeat layering. Bake at 375 degrees for 30-45 minutes. Let stand 15 minutes before serving. Serves 8.
