MOCK EGG SALAD | |
1 lb. drained tofu 2 tbsp. oil 1 clove garlic, minced 1/2 tsp. turmeric 1/2 tsp. caraway seeds 1/2 tsp. celery seeds 1 tsp. dill weed 2 tbsp. sesame seeds 4 tbsp. light mayonnaise 1 to 2 tbsp. mustard 2 scallions, minced 1/2 green pepper, diced 1/4 c. minced fresh parsley Crumble drained tofu in large bowl. Heat oil and saute briefly. Drain excess water while it cooks. Mix tofu with remaining ingredients. Serve on your favorite bread. |
