COUNTRY CHICKEN 'N' RICE 
1 c. chopped celery
1 c. thin sliced carrots
3 green onions, chopped
1 can (16 oz.) chopped tomatoes
1 tbsp. dried parsley flakes
2 tsp. salt
Dash pepper
1 pkg. skinless chicken breast, cut up
3 c. water
1 3/4 c. uncooked rice

Combine all ingredients, except rice, in 3 quart glass casserole. Cover with lid. Bake in 350 degree oven 50 to 60 minutes. Add rice and leave in oven for 5 minutes. Stir. Ready to eat. 4 to 6 servings.
