APPLESAUCE SPICE MUFFINS 
1/2 c. oil
2 c. sugar
3 egg whites
2 1/2 c. applesauce
1 tbsp. cinnamon
2 tsp. allspice
1/2 tsp. cloves
2 tsp. baking soda
1 1/2 c. oat bran
1 3/4 c. flour
1 1/4 c. oatmeal
1 c. nuts

Grind oat bran to flour in a blender. Mix together ingredients in the order given, mixing well after each addition. Fill greased muffin pans 3/4 full. Bake at 350 degrees for 15-18 minutes or until done.

Batter will keep in refrigerator for 2 weeks; cooked muffins will also freeze well. Flour may be substituted for oat bran if oat bran cannot be found.
