APRICOT BRAN MUFFINS 
2/3 c. finely chopped dried apricots
1 c. flour
2 1/2 tsp. baking powder
1 c. whole bran
1 beaten egg
2 tbsp. sugar
1/3 c. sugar
3/4 tsp. salt
3/4 c. milk
1/4 c. salad oil

Pour boiling water over apricots to cover. Let stand for 10 minutes. Drain well. mix with 2 tablespoons sugar. Sift together dry ingredients. Mix bran, milk, egg and oil, add to flour mixture, stirring until just moistened. Gently stir in apricots. Fill greased muffin pans 2/3 full. Bake for about 25 minutes at 400 degrees. Makes one dozen.
