CARROT-APPLE CAKE 
2 c. all-purpose flour
1 c. granulated sugar
2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tsp. salt
3/4 c. applesauce (unsweetened, if preferred)
1/4 c. vegetable oil
3 lg. eggs
3/4 c. coarsely grated, peeled carrots

Heat oven to 350 degrees. Grease a 9" tube pan. In a large bowl, mix flour, sugar, baking soda, cinnamon, nutmeg and salt. Add applesauce, oil and stir until blended. Add eggs and stir thoroughly. When batter is smooth, add carrots and mix well. Pour batter into prepared pan and bake for 1 hour and 10 minutes, or until a cake tester inserted in center of cake comes out clean. Remove from oven and place pan on a wire rack to cool for 5 minutes. Run a knife around edge of cake to loosen; turn out onto rack and cool completely.
