TWO CRUST LEMON PIE 
Plain pastry
1 tbsp. cornstarch
1 c. sugar
1 egg, slightly beaten
Juice & grated rind of 1 lemon

Combine cornstarch and sugar. Add lemon juice, 1 cup water and egg. Cook for a few minutes and cool. Line a pie plate with plain pastry and turn in mixture. Cover with top crust. Press together and trim. Gash top, and bake in 425 degree oven for 10 minutes. Reduce heat to 325 degrees and bake for 20 to 25 minutes longer.
