APPLE TARTS 
1 sheet (1/2 lb.) frozen puff pastry, thawed
1 Granny Smith apple
2 tbsp. sugar
1/4 tsp. cinnamon
1 tbsp. cold unsalted butter, cut into bits
2 tbsp. apricot jam, heated & strained
Vanilla ice cream or whipped cream as accompaniment

Roll out pastry 1/8 inch thick on a lightly floured surface. Cut out 2 (7 inch) rounds and transfer them to a baking sheet. Peel, half lengthwise, and core the apple. Slice it thin crosswise and arrange the slices, overlapping them slightly, on the pastry rounds.

In a small bowl, stir together the sugar and the cinnamon. Sprinkle over apples and dot with butter. Bake in a preheated 400 degree oven for 25 minutes or until pastry is golden brown. Transfer the tarts to a rack, brush them with the jam, and serve warm with ice cream or whipped cream.
