SWISS CHICKEN AVOCADO 
1/4 c. chopped onion
1/4 c. chopped mushrooms
1 clove garlic
4 tbsp. butter
2 tbsp. flour
1 c. chicken broth
1/3 c. sour cream
1 egg
1 tbsp. water
4 chicken breasts
Bread crumbs
1 lg. tomato
1 avocado
Swiss cheese (mozzarella or longhorn may be substituted)

Saute onion, mushrooms and garlic in butter over medium heat, until tender. Stir in flour and cook 1 minute. Add broth and stir until smooth and thickened. Season with salt and pepper. Add sour cream just before spooning over chicken. Skin and bone chicken breast (flatten with cleaver).

Dip in beaten egg with 1 tablespoon water then in bread crumbs and saute in butter or oil for 4-5 minutes on each side over medium heat. Arrange chicken in baking dish. Top with mushroom sauce, sliced tomato, sliced avocado (salt and pepper each layer) then cover with sliced cheese and bake at 350 degrees for 10 minutes, or until hot.
