APPLE CAKE 
4 c. Granny Smith apples
2 c. sugar
1/2 c. oil
2 eggs
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla
1 c. walnuts
1 c. coconut

Preheat oven to 350 degrees; grease and flour 12 cup bundt pan. Peel apples, core, and quarter apples. Cut into 1/4 inch thick slices. Mix apples and sugar; let stand 30 minutes. Add oil, egg mixing well. Sift together flour, cinnamon, soda, and salt. Stir into apple mixture. Add vanilla, walnut, and coconut; pour into bundt pan. Bake at 350 degrees for 35-45 minutes until toothpick inserted comes clean.

NOTE: Cake is sweeter next day.
