ZUCCHINI SOUP | |
7 c. zucchini cut in chunks 2 c. chicken (broth) stock 1 c. onion coarsely chopped 3/4 c. dry milk Some basil Some celery salt 1/4 c. yogurt or sour cream Cook zucchini and onion in the stock until tender. Then put mixture into blender and blend until smooth. Put mixture back into pot and add dry milk, whisk until smooth. Add basil and celery salt to taste. Add yogurt or sour cream. Serve cold or hot. |
