OAT BRAN MUFFINS 
2 1/4 c. oat bran
1/4 c. brown sugar or honey
2 egg whites
1 tbsp. baking powder
1 1/4 c. skim milk
2 tbsp. vegetable oil

Can add: 2 tsp. cinnamon or 3 tsp. cinnamon 1/2 c. raisins & 1 chopped apple or 1 can crushed pineapple with juice (add only 1/2 c. liquid)

Mix dry ingredients. Add egg white, vegetable oil and skim milk. Add whatever additional ingredients such as pumpkin, apple or pineapple. Bake at 425 degrees for 18 to 20 minutes.

Pour into pan, muffin pan. Makes 12 regular or 6 giant size muffins. Can be refrigerated for 1 week.
