ZUCCHINI JAM 
6 c. peeled zucchini, grated
6 c. sugar
1/2 c. lemon juice
1 c. crushed pineapple juice
1 (6 oz.) orange Jello
May use peach, etc.

Drain zucchini, makes own juice. Boil 6 minutes until clear with pineapple. Add sugar and lemon. Boil 16 minutes. Add Jello. Cool and freeze in containers. I use unsweetened Jello.
