PASCUALINA 
Recipe for biscuits to cover pie pan used (doubled)
2 pkg. frozen leaf spinach
1 onion, chopped
1 garlic clove
1 c. grated cheese
2 eggs
Salt & pepper to taste

Roll out biscuit dough thin. Place in pie pan. Set aside.

Cook spinach. Drain well squeezing out all liquid. Cook with onions and garlic in saute pan. Add cheese. Place this mixture in pie pan. Break open the eggs, placing them into 2 wells that you make in the spinach. Cover with other biscuit dough rolled thin. Cook at 350 degrees until crust is cooked.
