BAKED FISH FILLETS IN WHITE WINE 
2 c. coarsely chopped celery leaves and stalks
1 onion, sliced
2 1/2 to 3 lbs. white fish fillets or 1 inch slices
Salt and pepper
1/3 c. melted butter
1 tsp. finely chopped onion
Dash paprika
1 tbsp. lemon juice
1 c. dry white wine
Chopped parsley or watercress

Spread celery and onion in baking dish. Season fish with salt and pepper. Combine butter, chopped onion, paprika and lemon juice. Dip fish into butter mixture; arrange on celery and onion. Pour leftover butter mixture and wine over top of fish. Bake, uncovered, at 350 degrees for 25 to 30 minutes or until easily flaked with fork but still moist. Lift fish to serving dish, keep warm. Discard celery and onion. Pour wine from fish into saucepan; heat briskly to reduce to about 1/2 cup; pour over fish. Garnish with chopped parsley or watercress. Makes 6 servings.

This was a fantastic dish, but I tweaked it just a bit. First, I used shallots instead of onion, and chopped it instead of slicing it. I also layed some baby bok choy in the pan, then spread the celery and shallots on top of that. I served the bok choy with the fish. Then instead of discarding the celery and shallots, I mixed them into some wild rice for a side dish. It gave the rice a great flavor. I also added just a bti of sugar to the wine sauce as it was reducing because it was a bit sour. This may have not been a problem if I used a better wine.

I loved this recipe, though I changed it so I didn't have to run out to the store for any ingredients. I soaked the 2 kilos of white fish with happened to be Reineta (Pomfret family of fish found in Chile, South America) in white wine. I laid 3 thick slices of tomato and onion over the fish. Salt and pepper to taste. I sprinkled about 1/4 tsp of oregano over the vegetables and fish. I let it sit marinating for 30 minutes while I prepared the mashed potatoes. Bake fish uncovered for 45 minutes on 175º-200º Celcius. When the fish is served, pour remaining marinade over mashed potatoes. DELICIOUS!!!!
