CHINESE FRIED RICE 
1 1/2 c. minute rice
1 c. water
1 med. onion, chopped
3 tbsp. butter
3 tbsp. soy sauce plus water to make 1/2 cup
1 egg

Bring water to boil, add rice, cover and let stand at least 5 minutes. In large frying pan melt butter, saute onion until transparent, add egg and whisk until set (not runny). Stir in cooked rice and cook for about 5 minutes. Add 1/2 cup soy sauce and water mixture and mix; cook for 5 minutes or until rice is moist but not dry. You may also add any of the following: mushrooms, cooked chicken, ham or shrimp. Use your imagination. Serves 4-6.
