LEG OF LAMB 
1 leg of lamb (wash and make 6-8 slits to put 6-8 peeled cloves in slits)
Lemon juice
Salt and pepper
Garlic powder
Onion powder
Oregano leaves
Water

Put lamb in roaster, fat side up (to remain in this way). Pour lemon juice over generously. Season with salt and pepper. Now season generously with garlic powder, then onion powder. Sprinkle top with oregano leaves. Add 1 1/2 to 2 cups water to bottom of roaster and put in 500 degree oven for 20 minutes.

Reduce heat to 325-350 degrees and cook for remaining time, uncovered. Last hour, add peeled, quartered potatoes, onions and carrots. Season and baste. Turn once while cooking. Make sure there is enough water in pan to make wonderful au jus.

NOTE: Cook meat 25 minutes per pound.
