JAM CAKE 
1 lg. apple, chopped
2 c. sugar
4 c. flour
2 c. blackberry jam
1 1/2 c. buttermilk
1 1/2 c. Wesson oil
5 whole eggs
1 c. pear preserves
2 tsp. baking soda
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. allspice
1 tsp. cloves
1 tsp. vanilla
1 tsp. lemon flavoring
1 c. raisins
1 c. black walnuts
1 c. English walnuts
1 c. pecans

Cream sugar and shortening; add eggs, beaten; add dry ingredients alternately with buttermilk; then remaining ingredients. Bake in 3 layer pans in 375 degree oven. (I use self rising flour and don't put in soda.)

CARAMEL ICING:

4 c. white sugar, divided
1 stick butter
1 can Carnation milk

Boil 3 cups sugar and milk until it reaches soft ball stage, stirring constantly. Caramelize 1 cup sugar and stir into above mixture; add butter. Beat until spreading consistency.
