MEXICAN CORNY BREAD 
1 box cornbread mix
1/2 c. diced onions
1/2 c. diced green peppers
1 sm. can corn, drained well
1/2 c. shredded cheddar cheese
Jalapeno peppers (opt.)

Mix cornbread according to box directions. Stir in remaining ingredients and bake at 350 degrees for 40 to 45 minutes. Great with Mexican dinners or soup beans!!
