CARROT CAKE | |
3 c. grated carrots 2 c. sugar 2 c. plain flour 1 1/2 c. Wesson oil 2 tsp. baking soda 2 tsp. baking powder 2 tsp. cinnamon Pinch of salt 1 tsp. vanilla 4 eggs 1/2 c. chopped nuts Cream sugar and oil. Add eggs. Mix dry ingredients and sift 3 times; add to sugar and oil. Add carrots; beat. Add nuts and stir. Bake at 350 degrees for 50 to 60 minutes or until done. ICING: 8 oz. cream cheese 1/2 stick butter 1 box powdered sugar 1 tsp. vanilla Mix and spread on cake. |
