DIANE'S PIZZA CASSEROLE 
My family loves this and it is the only recipe my husband knows how to make so when I work late I can count on him to make this for dinner. We don't know why my aunt called it pizza casserole unless it once called for mozzarella on top. The variations are limited only by your imagination!

1 (16 oz.) bag wide egg noodles, cooked
1 lb. ground beef, cooked
1 onion, sautéed until caramelized
10 or so fresh mushrooms, sliced and sautéed
1 (14 oz.) can Rotel tomatoes
1 (10 oz.) can cream of mushroom soup (do not add water)
1 lb. cheddar cheese, grated

Combine cooked onion, mushrooms, ground beef. Stir Rotel tomatoes and mushroom soup into ground beef mixture to combine.

In a large 13x9-inch pan layer 1/3 of the cooked egg noodles then top with 1/2 the meat mixture and continue layering to end up with noodles on top.

Sprinkle cheese evenly over the top and bake in a 350°F preheated oven for 20 minutes or until bubbly and the cheese has melted.

This will easily feed 6 people or more if a couple are children. The leftovers are great the next day too. Enjoy!
