2 1/2 c. flour
2 1/2 c. sugar
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1 1/2 tsp. vanilla
3 jars Jr. carrot baby foods
1 c. Wesson oil
4 eggs
1/2 c. nuts (optional)
1/2 c. raisins (optional)

Mix all above and bake in a shallow pan at 350 degrees for 35-40 minutes.

ICING:

1 (8 oz.) cream cheese, softened
1 lb. confectioners sugar
1 stick butter
2 tsp. vanilla

Beat together and frost cake.
