FRUIT TORTE 
1 c. sugar
1/2 c. butter
1 c. flour, sifted
1 tsp. baking powder
Salt
2 eggs, or egg beaters
Choice of sliced peaches, Italian plums halved & skin side up 1 pt. blueberries or frozen mixed fruit, thawed & drained

Cream together sugar and butter. Add flour, salt, baking powder and eggs. Place in 9 inch springform pan. Add to top and cover entire surface with one of or a combination of fruits.

Sprinkle top with sugar and cinnamon (use a heavy hand), flour (if fruit is very juicy) and lemon juice (optional). Bake at 350 degrees for 1 hour. Best served slightly warm (with ice cream).
