LEMON MOUSSE 
1 tbsp. gelatin
1 c. sugar
1/2 c. fresh lemon juice or 1/2 c. pureed strawberries
3 egg whites, stiffly beaten
1 c. whipped cream or Cool Whip
2 drops yellow food coloring, to desired color
1/4 c. cold water
3/4 c. boiling water

1. Soak gelatin in cold water. Add boiling water - stir until gelatin dissolves. Stir in sugar and lemon juice or strawberries.

2. Pour mixture into bowl and chill. When mixture thickens mix in beaten egg whites and Cool Whip (or cream). Add coloring and mix through evenly.

3. Pour into pretty glass bowl and chill. Can be left overnight.
