CORN AND BROCCOLI STEW 
1 slice bacon, chopped
1 sm. yellow onion, chopped
1 sm. white potato, peeled and cut into cubes
1/2 c. skim milk
1/8 tsp. black pepper
3 c. broccoli flowerettes
1 1/4 c. fresh or frozen whole kernel corn

In a 12 inch non-stick skillet, cook the bacon over low heat until it begins to brown, about 3 minutes. Add onion, cover, and cook over moderately low heat for 5 minutes. Add potato, 1/4 cup milk, and pepper. Cover and cook until potato is almost tender, about 7 minutes. Add broccoli and remaining 1/4 cup milk; cook, uncovered, for 5 minutes or longer. Add the corn and cook for 3 minutes or until it is heated through.
