CORN & BROCCOLI STEW 
1 slice bacon, chopped
1 sm. onion, chopped
1 sm. potato, peeled & cut into cubes
1/2 c. skim milk
1/8 tsp. black pepper
3 c. broccoli florets
1 1/4 c. fresh or frozen whole kernel corn

Cook bacon until brown, about 3 minutes. Add onion. Cover and cook 5 minutes. Add potatoes, 1/4 milk and cook until potato is nearly done, about 7 minutes. Add the broccoli, remaining 1/4 cup of milk, cook uncovered 5 minutes. Add corn and cook 3 more minutes. Serve when cool.
