HONEY, THERE'S STILL MORE
ZUCCHINI IN THE GARDEN
 
6-8 sm. zucchini, unpeeled, sliced in circles
1 lg. onion, diced
1/2 lb. bacon, diced
1 lg. can (16 oz.) crushed tomatoes or fresh, diced tomatoes
1 can cheddar cheese soup (opt.)

Saute bacon until done but not crispy. Drain grease. Add onion and saute 3 minutes. Add zucchini and tomatoes. Simmer until zucchini is tender. May be topped with cheddar cheese sauce made with 1 can cheddar cheese soup and 1/4 can milk.
