1/2 lb. ground beef 1/2 lb. ground pork 1/2 lb. roast beef, cut in 1/2 inch cubes Brown and saute: 1 med. onion, chopped fine 1 clove garlic, minced Add: 2 tsp. Tabasco 1 tsp. leaf oregano 2 tsp. granulated garlic 1 tsp. powdered onion 1 tsp. cumin powder 1 tsp. dried parsley 1/2 tsp. black pepper 2 tbsp. flour Mix together and cook over low heat for a few minutes. Add: 1 Mexican beer, Tecate 2 lb. diced, peeled, seeded green chile, "Hatch" New Mexican Bring to a simmer. Thicken with a roux of 4 tablespoon butter and 4 tablespoon flour. The chile should be the consistency of a stew. Let simmer for at least 45 minutes to 1 hour. |
