FRESH APPLE CAKE 
Peel and thinly slice 4 cups apples. Place in a large bowl and sprinkle 2 cups sugar over. Let stand 1 hour, stirring to make juice. Beat 2 eggs, adding 3/4 cup oil and 1 teaspoon vanilla. Pour over apples.

2 c. flour
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
3/4 c. chopped nuts

Add mixture to apples and egg mixture. Mix well. Bake in 9x13-inch pan at 350 degrees for 40 minutes. Serve with or without frosting. Also good with whipped cream.

FROSTING:

1 stick butter
1 egg
1 tbsp. instant coffee or cocoa

Add 1 cup powdered sugar and 1 teaspoon vanilla.
