CHOCOLATE COVERED CHERRIES 
1 recipe divinity (below)
Pinch salt
2 c. sugar
1/3 c. white Karo syrup
1/2 c. water
2 egg whites, beaten until frothy
1 tsp. vanilla
2 bottles maraschino cherries, well drained
2 bags dark chocolate Wilton candy melts
Powdered sugar

First, drain cherries and set aside. Make divinity by combining sugar, salt, syrup and water in saucepan. Slowly bring to a boil and boil mixture until a hair-like thread forms when mix is dropped from a spoon into cold water. Add slowly to beaten egg whites and vanilla. Beat with electric mixer until egg whites and sugar mixture thickens and holds its shape. Drop by spoonfuls onto wax paper and let harden slightly. Powder hands with powdered sugar and wrap one piece of divinity around a cherry. Refrigerate 15 minutes. Melt chocolate as per package directions and working quickly, dip each divinity cherry into chocolate.
