SPINACH SOUP | |
2 qt. chicken soup or College Inn 1 pkg. frozen chopped spinach 4 tbsp. egg pastina 1 beaten egg 2 tbsp. grated cheese 2 tbsp. bread crumbs Bring soup to a boil. Add cooked spinach and pastina. Simmer. In a small bowl, beat egg thoroughly. Add cheese and crumbs. To this mixture, add some of the simmering broth. Stir. Then add to the spinach soup. Delicious with crusty bread! |
