PERFECTLY COOKED BROCCOLI 
1 lb. broccoli, fresh
1 clove garlic, minced
Season to taste
2 tbsp. onion, minced
1 tbsp. lemon juice

Trim broccoli to uniform size. Wash. Blanch for 8 minutes then plunge into cold water for about 3 minutes and drain. Saute onion and garlic. Add broccoli. Cook gently until everything is tender crisp; about 2 or 3 minutes. Add lemon juice. Season to taste. Serves 4.
