GREEN BEANS PROVENCAL | |
1 1/2 lbs. fresh green beans, trimmed 2 tbsp. olive oil 2 tbsp. fresh lemon juice 1/2 tsp. minced garlic 1/2 tsp. dried thyme 1/2 lemon, thinly sliced (garnish) Steam beans 3-4 minutes. Rinse under cold water to stop cooking process. Drain; pat dry. (Can be prepared ahead; set aside at room temperature.) Heat olive oil in large skillet over medium-high heat. Add beans and cook, stirring constantly, until heated through. Add lemon juice, garlic and thyme and cook 1 minute, tossing gently. Transfer to heated dish. Garnish with lemon slices and serve. Serves 4. |
