ENCHALATI PIE 
1 lg. onion, cut fine
1 1/2 c. hamburger (can use turkey or mixture)
Chopped parsley to taste
Garlic, salt, and pepper to taste
Persa (or oregano) to taste
1 c. grated Cheddar cheese
1/2 can chopped olives
1 can Las Palmas sauce, dilute with 3/4 can broth
Soda crackers

Mix bacon fat or oil with 1 tablespoon flour. Add sauce to this.

Steam onion in small amount butter with cover. Put into a bowl. Add oil to fry pan. Add hamburger and let steam. Add salt and pepper, chopped parsley, garlic, and persa. Mix. Add to onion. Add grated Cheddar cheese and chopped olives.

Line 9 x 13 inch pan with soda crackers. Layer the filling. Press evenly. Top with another layer of crackers. Pour sauce over all. Top with grated Cheddar cheese (and olives, if desired). Bake at 350 degrees for 1/2 to 3/4 hour.
