PERFECT PEANUT BUTTER COOKIES 
1/2 c. butter
1/2 c. creamy or chunk-style peanut butter
1/2 c. sugar
1/2 c. light brown sugar, firmly packed
1 lg. egg
3/4 tsp. vanilla extract
1 1/4 c. all-purpose flour
3/4 tsp. baking soda
1/4 tsp. salt

Heat oven to 375 degrees. In large bowl with electric mixer at medium speed, beat butter, sugar and 1/4 cup brown sugar until light and fluffy. Beat in egg and vanilla until thoroughly blended.

In small bowl combine flour, baking soda and salt; with mixer at low speed, beat into butter mixture until blended. Sprinkle remaining 1/4 cup brown sugar on top of dough; using rubber spatula, lightly fold in so sugar granules are still visible. Roll heaping teaspoon of dough into balls; place 2 inches apart on ungreased cookie sheet. Press each until 1/4 inch thick. Bake 5-8 minutes until lightly browned.
