MANDARIN CHICKEN 
1 whole chicken breast, cut into strips
2 tbsp. oil
1/2 lb. broccoli
1 carrot
1 onion, sliced
1/4 or 1/3 stir fry sauce
1 pepper, red or green, sliced

Heat oil, add chicken. Stir-fry for 2 minutes. Add broccoli, carrots and peppers. Stir-fry for 4 minutes, covered. Add 1/4 or 1/3 of stir-fry sauce until vegetables are coated with sauce. Serve over rice.
