PINWHEEL COOKIES 
FILLING:

1 c. chopped nuts
1 lb. chopped dates
1/2 c. water
1/2 c. sugar

Mix together. Cook until thick. Cool.

DOUGH:

1/2 c. butter
1/2 c. brown sugar
1/2 c. granulated sugar
1 egg, beaten
1/2 tsp. vanilla
2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt

Mix all above together. Roll out. Spread cool filling on dough. Roll up and wrap in waxed paper. Chill 1-2 hours. Slice and bake on greased cookie sheet until brown at 375 degrees.
