EASY CARAMEL ROLLS 
2 c. biscuit mix
1/2 c. milk
2 tbsp. butter
1/2 c. firmly packed brown sugar, divided
1 tsp. ground cinnamon
1/4 c. butter, melted
1/2 c. chopped pecans

Combine biscuit mix and milk, stirring with a fork until blended. Turn out dough onto a lightly floured surface, and knead 4 to 5 times. Roll dough into a 15 x 9 inch rectangle, and spread with 2 tablespoons butter.

Combine 1/4 cup brown sugar and cinnamon; sprinkle mixture over dough. Starting with long side, roll up jelly roll fashion. Pinch seam to seal (do not seal ends). Cut into 12 slices. Combine remaining 1/4 cup brown sugar, melted butter and pecans; divide mixture equally into well greased muffin pans. Place slices, cut side down, into muffin pans. Bake at 350 degrees for 20 to 22 minutes or until lightly browned. Remove from pans immediately. Yield: 1 dozen.
