CAJUN CORNBREAD 
1 c. cornmeal
1 c. buttermilk
1 (8 1/2 oz.) can cream corn
1/2 c. bacon grease
2 eggs, well beaten
1/2 lb. ground meat
1/2 lb. Cheddar cheese
1/2 c. chopped onion
2 chopped Jalapeno peppers
1/2 tsp. baking soda
1/2 tsp. salt

Mix cornmeal, buttermilk, soda, salt, corn, grease and egg together. Set aside. Brown meat and drain. Add cheese, onion and pepper. Lightly sprinkle meat on bottom of 13 x 9 inch baking dish. Pour 1/2 of cornbread mix into pan. Add meat mixture. Top with bread mixture. Bake at 350 degrees for 1 hour.
