FRENCH ONION SOUP 
3 slices bacon, chopped
4 c. onions, sliced
2 cans beef broth
2 cans water
Salt and pepper
1 jigger brandy
4 slices French bread, toasted (about 1-inch thick)
1/2 c. Gruyere cheese, grated
1/2 c. Parmesan cheese, grated

Saute bacon in heavy saucepan for 4 minutes. Add onions and saute until lightly browned. Add beef broth, water, salt and pepper, and brandy. Bring to a boil and then simmer for 45 minutes.

Pour soup into ovenproof dish and top with French bread. Sprinkle cheeses over bread and put dish under preheated broiler until lightly browned and bubbly. Serves 4.
