CARROT CAKE | |
2 c. sugar 1 1/2 c. oil 4 eggs 2 c. plain flour 1 tsp. baking soda 2 tsp. cinnamon 3 c. grated carrots 1 c. pecans 1/2 c. coconut Mix first five ingredients. Add last four. Mix and pour into 3 round sprayed cake pans and cook for 30 minutes on 300°F. Topping: 8 oz. cream cheese 1 stick butter 1 box confectioners sugar 2 tsp. vanilla flavoring 1 c. pecans 1 c. coconut You may need to add 1 tsp. of sweet milk to thin. Add to cake while warm. |
