CURRIED CHICKEN SALAD 
2 to 3 c. cooked chicken or turkey, cubed
1 (4 oz.) can water chestnuts, drained and sliced
1/2 lb. seedless grapes, halved or 1 (11 oz.) can mandarin oranges
1 c. celery, chopped fine
1 c. mayonnaise
1 tsp. curry powder
2 tsp. soy sauce
2 tsp. lemon juice
Salt to taste

Combine chicken, water chestnuts, grapes or oranges, and celery. Mix all remaining ingredients, add to chicken, and toss well. Chill several hours. Serve on Bibb lettuce. Makes 6 servings.
