16 oz. Breakfast Patties, ground 1/2 c. dry bread crumbs 1/4 c. onion, finely chopped 1/4 tsp. allspice 1 c. low-fat cottage cheese 2 c. cooked rice, warm. 1/2 c. Scramblers 3/4 c. skim milk, divided 2 tsp. parsley flakes 1 tbsp. lemon juice 1/2 c. mushrooms, thinly sliced Combine ground Breakfast Patties, Scramblers, bread crumbs, 1/4 cup skim milk, onion, parsley and allspice. Shape into 1 inch "meatballs" (about 25). Arrange in microwaveable 8 inch dish. Cover with wax paper. Microwave on high 5 minutes. Combine lemon juice, cottage cheese and remaining skim milk in a blender; mix on medium-high speed until smooth and creamy. Combine cottage cheese mixture with "meatballs". Sprinkle mushrooms on top. Microwave, covered, at medium-high 5 minutes, or until heated through. Serve over rice. Serves 5. |
