PEAR CRUMBLE PIE 
6 med. Barlett pears, pared
3 tbsp. lemon juice
1/2 c. sugar
2 tbsp. flour
1 tsp. grated lemon peel
9" unbaked shell
1/2 c. flour
1/2 c. sugar
1/2 tsp. ginger
1/2 tsp. cinnamon
1/4 tsp. mace
4 tbsp. butter
3 slices sharp Cheddar cheese

Slice 5 pears. Cut remaining pear in sixths. Sprinkle pears with lemon juice. Combine the first 1/2 cup sugar, the 2 tablespoons flour and the lemon peel. Stir into sliced pears. Spoon into pastry shell. Arrange the 6 pear wedges, spoke fashion on top of the sliced pears.

Combine the 1/2 cup flour, the second 1/2 cup sugar and the spices. Cut in butter until crumbly. Sprinkle over pears. Bake in a hot oven, 400 degrees, about 45 minutes or until pears are tender. Remove from oven. Arrange cheese triangles on warm pie. Serve warm.
