MARINARA SAUCE 
6 med. fresh tomatoes Peeled, cored and chopped
3 tbsp. olive oil
2 c. chopped onion
1 c. chopped green pepper, optional
2 clover garlic, pressed
1/4 c. chopped fresh parsley
Salt and pepper to taste
1 tsp. basil leaves, crushed
1/2 tsp. oregano leaves, crushed

Heat oil in saucepan. Add onion, green pepper, garlic and parsley; cook until soft. Stir in tomatoes, salt, pepper, basil and oregano. Cool over low heat until thickened, stirring often. Great to serve hot over fish, poultry, vegetables or pasta.
