MARINARA SAUCE 
8-10 med. plum tomatoes
4 cloves garlic, crushed
1/4 c. chopped onion
1/4 c. chopped green bell pepper
1/2 c. chopped fresh mushrooms
1/2 c. olive oil
2 tbsp. chopped fresh parsley
1 tbsp. chopped fresh basil
Salt to taste

To loosen skins, place tomatoes in boiling water for 30 seconds and then immerse them in cold water. Remove skins and mash tomatoes.

Saute onion, green pepper, and mushrooms in olive oil until they are soft. Add tomatoes, garlic, parsley, basil, and salt. Simmer for one hour. Serve over fresh pasta.
