BASIC RECIPE FOR MUFFINS OR BREAD | |
1 1/2 c. flour (white or 1/2 wheat and 1/2 white) 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. butter 3/4 c. sugar 1 egg 1 tsp. vanilla 1 c. fruit 1/2 c. nuts Mix flour, baking soda and salt. Set aside. In medium bowl, cream butter and sugar until fluffy. Beat in egg, vanilla and fruit. Stir in flour mixture until blended. Stir in nuts. Spread in greased muffin pan or loaf pan. Bake muffins 15 to 20 minutes. Bake loaf 40 to 50 minutes. Bake at 350 degrees. If apples or pears are used, add cinnamon and nutmeg if desired. |
