BROILED FLOUNDER WITH BACON &
GREEN ONION
 
2 whole flounder fillets
6 slices bacon
2-3 green onions or scallions, chopped
1 tomato, peeled, seeded & chopped
Softened butter
Lemon juice

Place fillets on a well greased broiled pan. In a skillet, saute bacon until crisp. Remove and drain on paper towel.

Pour off all but 1 tablespoon bacon fat. Add chopped onion and tomato to skillet and cook 2 minutes. Add crumbled bacon to this mixture.

Spread softened butter and lemon juice over fillets and spoon bacon mixture over. Broil as usual without further basting until fish flakes easily and is nicely browned.

I don't really care for flounder but I did try this recipe and I found it to be quite good. I must add that I used Coriander and Cumin on the fish, too.

This recipe worked out great. I used leftover bacon that I had cooked 2 days earlier so it crumbled easily. I sauteed red onion and a plum tomato in a mixture of olive oil and organic butter for about 15 mins because I like my onions well cooked and a bit caramelized. I threw in the bacon I crumbled with my fingers and then I spread it on top of the flounder on which I had drizzeled melted butter and a fresh lemon along with salt, black pepper, onion and garlic powders. I broiled it for 10 mins and it was quite tasty. I ate it with brown rice fluffed with butter, steamed broccoli, zucchini and asparagus to which I added olive oil, sprinkle of parmesan cheese and a little whipped butter.
