BEET SALAD 
1 (3 oz.) pkg. lemon gelatin
1 c. boiling water
3/4 c. beet juice
1 c. diced beets
3/4 c. diced celery
3 tbsp. vinegar
1/2 tbsp. salt
1 tbsp. horseradish
2 tsp. grated onion

Dissolve gelatin in boiling water. Add remaining ingredients, except beets and celery. Mix. Chill until partially set. Add celery and beets. Place in ring mold. Chill until set. Serve.
